FREE for the next 5 days - NO WORK! \o/

It's been a rough year, and I actually had customers tonight indignant that I would actually have time off for the holidays, but HA! I totally DO, suckas! And there ain't nothin' they can do about it! XD

Tonight, I shall play much Halo: Reach. Tomorrow, I'm finally getting my hair done. (Ugh... This is actually a bad thing. I hate how long it takes and the allergic reaction I have to simply stepping foot inside a salon. Not to mention it's freaking expensive, and did I mention how long it takes?)

The Christmas shopping is all done; I only have a few more to wrap. Ter and I anticipate devoting some time to attempting some sort of new food. We're thinking Chicken Parmigiana... Any suggestions? I have a feeling many of you are very good chefs.

I think I'm gonna see Megamind for a third time on Thursday, but only if I can find it in 3D, because I haven't seen it that way yet. There's also the point of writings that need to be finished by Christmas Eve: I have been working diligently!

Anyway. Halo is calling my name... I think I'll play some Invasion! and Invasion Slayer! for maximum ownage.

It kind of pisses me off that a lot of people forget that retail/customer service people are people too and need time off as well. We are not drones, thank you very much! I had a coworker last holiday who got pretty pissed at a customer for being indignant about the fact that our store was closed on Christmas - and she's someone who doesn't get mad that easily!

Chicken parmigiana sounds delicious! There are so many recipes out there that's it's guaranteed that you'll always find something new that's tasty. =D I discovered a stuffed chicken breast recipe a couple years ago that I modified and fell in love with. It's soooo good. If you want the recipe, I can give it to you. =D

I wish I could get angry with our customers. I had a guy screaming at me so loud yesterday that half my team could hear him. From my headset. The funny thing is that people complain about good customer service being so hard to find these days, and then they go around, treating the people that provide said service like crap, and they wonder why they're never satisfied! Every year we have customers that are furious that we were closed on Thanksgiving/Christmas/Fourth of July, etc.

Stuffed chicken boobie breast, you say? What do you stuff it with?

Yeah, I always wanted to say "HEY! Just because I'm working in retail doesn't mean that I'm stupid! I have a Bachelor's of Science in Wildlife, Fish, and Conservation Biology, for crying out loud! I'm lucky to even HAVE a job in the first place!" ...But that might have cost me my job for being rude, so....

LOL. I use a mix of ricotta, parsley, mango, and raisins. You can substitute the mango for apricot, or the raisins for cranberries or dates, but that's the combination I really fell in love with. The whole thing is wrapped with a piece of bacon. =D

I'd prefer to say something along the lines of "Sir/Ma'am, you do realize that we're people over here, too, right? Just like yourself. We have feelings, families, hopes, dreams, needs, and goals. So if you could, you know, have the common decency to just treat us like human beings, it would improve this conversation immensely, which is currently severely lacking in respect on your side." But yeah. I'd get fired for that, too. XD

Ahh... Filling it with fruits! Tasty! I assume it's baked or are we going unhealthy with frying? :D

I miss mangos... :( Most of my life, I was able to eat them, but about 7 or 8 years ago, I became violently allergic. Along with all melons, bananas, and avacados. ;_;

Just last week, there was an incident at Taco Bell; I told them not to put the avacado sauce on the burrito. Well... they did, and I didn't know until I bit into it; seconds later, my mouth was itchy. For the next 2 hours, my mouth, throat, and ears were very itchy and breathing was labored akin to asthma. But I worked through it, because of aforementioned manager issues. My doctor was not happy; he said I should have gone to the hospital. And now I have to carry shots of adrenaline with me, plus benadryl, and be prepared to call 911 immediately after giving myself a shot if it happens again. ;_;

You sear the chicken for a bit to crisp up the bacon, but then you bake it. It's very, very tasty. =D

OIC! :D Well, it sounds super tasty! I never would have thought about fruit inside chicken; we always do stuff with veggies or other meats. We shall definitely be trying it. Tankies!

Well... on the bright side, I don't mind being allergic to coconuts. :D Which my dad, island boy that he is, finds extremely offensive. LOL

It's awesome. The sweetness of the fruit works really well with the savory of the bacon and chicken. Just remember to season it or it'll probably turn out a bit on the bland side. =)

Sorry, would have typed it for you this morning in my original comment, but I was on my iPod!

Anyway, super easy!

Just drop a couple of thawed chicken breasts into a bag of Italian style bread crumbs and shake to coat. Then brown them in a skillet of olive oil. The key to getting the breading nice and crispy is to add olive oil whenever you turn them over. When the chicken is golden brown and cripsy on the outside (usually in about 10 minutes), drain the oil, and cover chicken breasts with a jar of pasta sauce (I like Prego Traditional) mixed with grated parmesan cheese. Cover skillet and cook for about 10 more minutes. Melt mozzarella and additional parmesan cheese over the chicken breasts and serve over angel hair pasta!

See? SUPER easy! One of our favorite meals. :)

np. I love the idea of touch screens for navagation, but it's so much easier to use a keyboard... We got a real hankering to try meatballs tonight, anyway. lol (They were tasty.)

Wow. That is really easy. I had no clue what to use for the breading... I'm totally going to convince Terri that we need to make this tomorrow. Er today... For Christmas Eve-Eve dinner!
